Lemon Loaf Cake Recipe (Inspired by Starbucks)

Anyone here tried Starbucks’ Lemon Loaf before? I love it as it is Full of lemon flavor, moist, dense, and rich.
Since we are asked to stay at home, I thought why not we try to bake this lemon loaf at home? So here's the recipe I used to bake the Lemon Loaf Cake Recipe:

Ingredients

The Lemon Loaf Cake
1/2 cup butter (113 gram), room temperature
1 cup sugar (200 gram)
zest of 2 lemons
1 tsp vanilla extract
2 eggs, room temperature
1 1/2 cup all purpose flour (195 gram)
1.5 tsp baking powder
0.5 tsp salt
1/2 cup buttermilk (120 gram)
2 tbsp lemon juice (about 0.5 lemon)

The Lemon Syrup
1/4 cup icing sugar (50 gram)
2 tbsp lemon juice

The Lemon Frosting
1 cup icing sugar (120 gram)
2 tbsp lemon juice
1 tbsp milk
Instructions

The Lemon Loaf Cake
  1. Pre heat oven at 180ºC.
  2. Sift flour, baking powder and salt into a bowl. Set aside.
  3. Add butter and sugar into a another bowl. Using a hand held mixer, whisk them until fluffy and pale, around 10 minutes.
  4. Turn to low speed and add in egg 1 by 1, followed with vanilla extract, lemon zest.
  5. Add 1/2 of flour mixture and mix just until combine using low speed. Add in buttermilk and lemon juice, continue mixing just to combine. Finally add the rest of the flour, mixing just to combine also.
  6. Pour batter into a loaf pan that has been buttered and lined. Spread batter evenly.
  7. Bake in a preheated oven at 180ºC for 55 minutes until golden brown. Remove from the oven.


The Lemon Syrup
  1. Combine icing sugar and lemon juice in a bowl.
  2. While the cake is still hot, pour the lemon syrup on top and brush evenly. Leave to cool completely.


The Lemon Frosting
  1. Add icing sugar and lemon juice into a bowl. Using a spatula, mix everything well into a thick mixture. Start with 1 tbsp lemon juice and add as you go to get your desired consistency.
  2. Pour the lemon frosting on the cake. Spread evenly using the back of a spoon.
The cake turns out velvety soft and moist, simply best for tea time! The cake is sweet and full of lemon 
flavors but not sourish, even my little girls love it.
